Chocolate Truffles

These are made wee handmade sweets that really hit the spot – they are great for Christmas or any other celebration and they are dead easy to make.

Wot u need
1 cup dessicated coconut
1 cup porridge oats
50g (2oz) margarine or butter
50g (2 oz) sugar
2 tbsp drinking chocolate (powdered)
4 tbsp milk (or two milk and two of a liqueur – I use Drambuie!)

How u do it
Place the sugar, margarine/butter and milk/liqueur in a pan and bring to the boil. Add the coconut, porridge oats and drinking chocolate, mix and allow to cool for five minutes (any longer and the mix will set and be hard to work with.) When cooled, roll into small bite-sized balls using the tips of both fingers and roll in some coconut – serve in small petit four cake cases. Refrigerate and eat on the second day – will keep for four or five days easily. Delicious!
