Lentil Soup (updated March 2014)

This soup is a real winter warmer that can be enjoyed any time of the year. Enjoy.

Wot u need
1 mug red lentils
3 big carrots grated
2 large onions finely chopped
1 bag dried country vegetables
3 ham/chicken stock cubes
1.5 litres cold water
2 tsp salt
2 tbsp butter (never margarine or other spread!)
pepper

Wot u do
Dead easy this one. Add the onion and butter to a pot and cook off for five mins till the onion is translucent. Add the lentils and carrot and mix. Add the stock and pepper, cover and boil. Simmer for 30 mins. Blitz, test for seasoning and add the country veg, cover and simmer for a further 30 mins.

Makes a good big pot.

Top tip: This soup is great on the second day! Use veg or chicken stock cubes if you like. Once cooked add a tin of butter beans and some chopped ham for “lentil, butterbean and ham” soup!

Serves: 7 – two ladles each
