Patatas Bravas (wet version)

This is a classic Spanish snack – the only problem is that you can get some really shit versions if you visit Spain – not much more than deep fried chips with tomato sauce and mayo! This recipe is different!

Wot u need
3 baking potatoes
3 tsps paprika (sweet)
2 tbsp tomato ketchup
1 garlic clove
1 onion
3 tbsp olive oil
Tabasco sauce
Salt and pepper

Wot u do
Stick the oven on and heat to 200 degrees c. Stick 2 tbsps olive oil in a baking tray and stick in the oven as it heats. Peel the potatoes and cut them into 2 cm cubes. When the oven is at the correct temperature chuck the potatoes into the hot oil, sprinkle with about a teaspoon of paprika and season with salt and pepper – coat in the oil. Cook in the middle shelf of the oven for 15 minutes, mix up with a spoon and cook for a further 15 mins. Finally mix again and stick on top shelf for 5 mins. Meanwhile, finely shred the garlic clove and the onion and cook in a pot with about a tbsp of olive oil – cook for 5 mins until onion is translucent. Add a good two tsp of the paprika and 10 drops of Tabasco sauce. Add two tbsp tomato ketchup and two tbsp cold water and mix and bring to the boil – simmer for 2 mins. To serve, stick crispy potatoes on a plate and liberally cover in the hot sauce – sublime. Serves 2.

Top tip: No need to use extra virgin olive oil – waste of money for cooking just use any old standard olive oil.
