Tarka Dhaal (or fried lentils or lentil curry)

This is an easy and tasty vegetarian option. It is particularly nice served with boiled basmati rice and a side of mango chutney.

Wot u need
175g red lentils
1/2 tsp cumin seeds
1/2 tsp chilli powder
1/2 tsp tumeric
1 tsp salt
1 medium onion
1 tbsp garlic pulp
1 tbsp ginger pulp
1 tomato
1 green chilli
3 tbsp vegetable oil
500ml warm water
Fresh coriander

Wot u do
Rinse the lentils in cold water and allow to sit in water for 15 mins. Place the lentils, tumeric, chilli powder, salt and the water in a pot, partially cover with a lid , bring to the boil and cook on a simmer for 12 mins (uncovered). After this time chop the green chilli finely and add to the pot. Simmer for 20 more minutes (uncovered) – stir every five mins or so. Meanwhile heat the oil in a pan and add the cumin seeds – cook for 2 mins till the seeds pop. Add the onion and cook till nice and brown (nearly burned) – add the garlic and ginger and cook for three more minutes. Chop the tomato and add to the onion mix and cook for two mins. Stir in 1 tbsp chopped coriander. Chuck the onion mixture into the lentil pot, mix and serve.

Serves: loads

Top tip: USe a slow cooker. Follow recipe till “bring to the boil” then chuck lot in a slow cooker and cook on high for three hours.
