Semolina pudding…for one!

The reason this dish is for one is that you will never ever find anyone else in the house that will touch it. I really urge you to try this though as it’s a wonderful pudding that has a consistency somewhere betwen custard and rice pudding. If you are from Scotland or the UK this was a very very famous sweet in the school dinner halls of the 1970s (I remember it well!)

Wot u need
300 mls milk
2 tbsp semolina powder
1 tbsp sugar

Wot u do
Dead simple this one. Heat the milk slowly till it nearly reaches boiling point. Sprinkle on the 2 tbsp of semolina and 1 tbsp of sugar and bring to the boil. Immediately place on a very low simmer and leave uncovered for 5-10 mins.

Pour into a bowl – leave for five mins and add a big dollop of jam on the top! Enjoy.
