This is a really magical soup that is full of flavour and is very nutritious – and it’s dead easy to make.
Wot u need
1/3 white cabbage – shredded
1 carrot – cut into circles then roughly chopped
1 medium celery stick – finely chopped
1 small leek – finely chopped
1 diced onion
1.5-2l hot water
3 ham stock cubes
1 tin tomatoes
2 300g tins barlotti beans
2 garlic cloves finely chopped or 1 large tsp garlic puree from jar
1 tbsp olive oil
1 tbsp tom puree
4 slice smoked back bacon – lean
Good glug of extra virgin olive oil
Wot u do
Add all the chopped veg and the garlic to a pot and drizzle on the olive oil. Mix, bring to heat quickly, cover, cut down to simmer and leave sweating for five minutes. Meanwhile stick the kettle on. When boiled add three stock cubes to the water and add to the veg mix. Add the chopped tomatoes and the tomato puree. Meanwhile fry the bacon in a wee drop veg oil. Once cooked chuck the lot into the stock pot. Squeeze in tomato puree, add beans and pour over a good glug of extra virgin olive oil. Bring to boil then season with pepper and two flat tsp salt cover and simmer for 1 hr.
Makes enough for six hungry folk – easily!
