These are a great side dish for parties or are a brilliant low-fat alternative to chips (fries for US visitors.) They are really dead easy to do.
Wot u need
2 uncooked baking potatoes
1 tsp chilli powder
1 tsp paprika
1 tsp sea salt (or 1/4 tsp pouring salt)
1 tsp mango powder (optional but good – available from Indian grocers.)
Twist or two of black pepper
Glug of olive oil

Half each potato and cut into little orange-segment shapes (you’ll get 4 or 5 from each half.) Chuck these into a bowl and sprinkle on all the dry ingredients. Give all this a rumble about for 10 secs. Pour a glug or two of oil onto the potatoes just to coat them – not drown them! Mix the whole lot up together and leave to sit for 10 mins. Meanwhile stick the oven on at 200 degrees c. When the oven is hot fire the potatoes onto a baking tray making sure there is some room between them. Cook for 20 minutes give them a shake and cook for a further 20 minutes.
Make sure the segments are small to get nice crispy wedges. Stick these out with a couple of dips from the supermarket – sweet chilli and BBQ dips are the business!
Another good tip is to leave the wedges in the oven with the oven switched off 15 mins before eating.
