Slow baked rice pudding – all the twos!

This is the simplest of recipes – and it is simply delicious – a Scottish classic. It’s like a big warm hug in a bowl!

Wot u need
Two big tbsp of pudding rice
Two dessertspoons of caster sugar (good spoonfuls)
Two pints semi-skimmed milk
One tbsp butter

Wot u do
Rub a casserole dish with the butter. Chuck everything else in. Stir. Stick in the oven covered at 150 degrees c fan. Stir after 1hr to 1hr 30 mins. Cook in total for three hours till you get a silky pudding. If you like a crust – leave open for the last 30 mins.

Serves 4.

Top tip: Your oven will get messy – my pudding always comes over the top of the casserole – this is fine as it’s just the bubbles that cause this. Put a baking tray in the bottom of the oven!

Top tip: If you are a bit girly add some sultanas and raisins half way through!
