Pork Meatballs in tomato sauce

Not much to say here – a really wonderful wee staple that is a winner every single time. I really love this recipe.

Wot u need
MEATBALLS
500g pork mince
1 small onion finely chopped
3 tbsp brown breadcrumbs
2 garlic cloves finely chopped
1 tsp oregano
1 tsp Italian herbs
1 tbsp fresh parsley
1/2 tsp salt

TOMATO SAUCE
1 big onion chopped
2 tins chopped tomatoes
1 tbsp tomato paste
2 garlic cloves finely chopped
Pinch sugar
1 tsp oregano
1/2 tsp salt
Wot u do
Place meatball ingredients in a bowl and mix well. Mould into small meatballs about 1/2 the sive of a golf ball. Cover and refrigerate for 30 mins. For the tomato sauce, Stick all the ingredients in a pot and slowly bring to the boil – simmer for 10 mins. Blitz in a food processor and cook very slowly for a couple of hours (covered) or three hours at low in a slow cooker. To cook meatballs add some olive oil to a pan and slwly cook meatballs in batched for five minutes then turn and five more mins. Add to sauce and enjoy.

Serves 4 – serve with penne or spaghetti.
