Wot u need
200g granulated sugar
4 tbsp golden syrup
1 heaped tsp bicarbonate of soda
Wot u do
Place sugar in a medium size pot (not too big) and put a low heat underneath it. Immediately add the syrup but don’t mix – allow to begin to heat for three minutes or so. Once a bit of warmth is in the mix, use a wooden spoon and stir around to get a fairly grainy, golden smooth mix. Turn heat up to medium and keep stirring for five mins or so until the graininess has gone from the bottom of the pan – don’t have heat too high or sugar will really darken and burn – but you do need to let it boil till golden. As soon as the mixture has no grainy feel take off heat and sprinkle over top bicarb. Then quickly stir in to release gas and puff the mixture up. Stirring takes about 5 seconds then immediately tip onto a foil lined rectangular standard baking tin and leave in a cool place for 1 hr. Then break up.
Secret is not to have heat too high – whole thing takes about 15 mins.
