Smokey Boston Baked Beans

Now this dish takes a bit of time and a bit of work – but – it is very,very tasty and is great as a stew on its own with bread and butter or as a side dish. It really is worth the effort., it’s brill!!!

Wot u need
One smoked ham hock
2 tbsp djon mustard
1 small tub of hot salsa (1 mug)
1/2 mug brown sugar
1 large onion finely chopped
2 tbsp golden syrup
1 mug Yoshida’s wings marinade (or other bbq marinade)
500g navy or cannelloni beans (about 3 mugs)
2 tsp salt

Wot u do

Soak the beans overnight. Rinse and add cold water to cover – boil for 5 minutes. Take of heat, cover and leave for one hour. Drain beans. Add ham hock and cover with cold water. Boil and then simmer for 20 mins covered. Add salt, cover and simmer again for 20 mins. Drain (keeping one mug of the water) and remove ham hock. Add rest of ingredients to a clean pan and add beans and reserved liquid – mix. Add hock. Cover and simmer for a couple of hours till all reduced and delicious. Remove hock but leave some of the bits in for a great smokey taste.

Serves loads of folk and freezes well too.
