Slow cooker pulled pork (crockpot)

What can I say about this recipe? Honest to God this is comfort food at its finest. Takes ages to make but it really is worth it. And it’s dead easy to make!

Wot u need
Two big onions
About a 4lb shoulder of pork – deboned
1.5 cups BBQ sauce
Any meat rub you choose
1 cup water

Wot u do
Thinly slice the onions and place half in the bottom of your slow cooker. Rub your pork with about 2 tbsp of meat rub (I use Tesco’s Bush Tucker Rub) and place on top of the onions. Add the cold water and place the remaining onions on top. Cook on LOW for eight hours (no need to even look at it during this time.)

After eight hours remove the meat and place on a board. Sieve the juice and onion mix, discarding the liquid. Once cooled, shred the meat – it’ll be falling to pieces anyway – and return to the slow cooker with the onion mix from the sieve. Add the BBQ sauce, mix and cook on LOW for a further three hours stirring every hour. Should end up a big thick stringy tasty mess!

Serve in a bun with some coleslaw and a side salad. Add hot sauce for extra bite!

Serves loads!
