Creamy Shrimp Curry

This is a great dish – easy to do and really tasty. The shrimps used are not those big fancy prawns, nope, just little screwed up cheap shrimp form the supermarket – they are sooooooo…. meaty when cooked. You’ll love this recipe.

Wot u need
150-200g shrimp
2 tbsp curry paste (I use Patak’s Tikka Masala)
2 finely chopped tomatoes (inc pips and skin)
100 mls cold water
1 medium onion finely chopped
3 tbsp single cream
3 tbsp chopped coriander
Seasoning

Wot u do
Fry the onion in a little oil till it starts to go brown and dark. Add the shrimp an stir fry for three minutes. Add the curry paste and stir fry for a further three minutes. Add the chopped tomatoes and yes, stir fry for a further three minutes. Then add the water, mix, cover and simmer on a low heat for 10 mins. After this time add the cream and coriander.mix and serve.

Serves 2.
