Stewed Rhubarb

Mmmm what the hell can you say about rhubarb? Most normal folk will see it as being truly awful, minging, rank! It is I suppose but I do love it. I think it as a particularly Scottish thing. It certainly brings back horrible/happy memories of school meals and of my grannies summer dinners. Ohh and, for the record, stewed rhubarb is eaten as a sweet…even though it’s a vegetable!

Wot u need
About 7 big stalks rhubarb
2-3 tbsps sugar
4 tbsp cold water

Wot u do
Cut the rhubarb into 2 cm chunks and wash in cold water. Add to a pan with the water and sprinkle with the sugar. Bring to the boil, simmer and cover. Cook for 10 mins. Stir and cook covered for a further 5 minutes. Taste for sweetness – the rhubarb shouldn’t be too tart or too sweet. Add sugar as required.

Serve with custard or use as a base for delicious rhubarb crumble.
