Leek and Potato soup

This soup is based on Jamie Oliver’s (with some additions) – it really is very oniony and is a brilliant “fill me up” recipe. Great for a snack, or for taking to work for lunch in the cold months. This recipe is easy to remember – everything is in 2s!

Wot u need
2 large leeks
2 sticks celery
2 carrots
2 medium onions
2 garlic cloves
1.5l veg or chicken stock (three stock cubes – the wet ones are good)
2 medium baking potatoes
200mls semi-skimmed milk
Olive oil
Seasoning

Wot u do
Chop all the veg into small pieces and sweat off in a covered pot for five minutes on medium/low heat with about 2 tbsp olive oil. Add the stock and potatoes and bring to the boil. Cover the pot and simmer for 20 minutes. Bltz soup using a hand blender. Stir in milk and season to taste.

Serves loads!
