Oven roasted sweet peppers

Roasted sweet peppers are sublime. They can be eaten on their own as a starter (as they do in Spain) or they can be served with rice and grilled meat or indeed many other main courses. They are also beyond easy to cook!

Wot u need
Some sweet peppers – any type will do
Cheap olive oil
Very small sprinkle of salt

Wot u do
Heat oven to 150 degrees c (fan) Wash the peppers and pat dry – don’t cut. Place in a fairly tight packed ovenproof dish. Add a glug of olive oil just to coat. Sprinkle with salt. Cover tightly with foil. Bake for one hour. Take off foil, turn peppers and cook at 180 (fan) for a further 10 mins.
