Spiced carrot and coconut soup

This is the easiest soup in the world to make. It is very subtle and has a lovely spicy taste with just a very slight hint of ginger – really perfect. Works well for everyday use or for a special occasion.

Wot u need
1 kg grated carrots
2 onions roughly chopped
1 chopped chilli
2 cms grated ginger
900 mls chicken stock (I use three gel cubes)
2 tbsp olive oil
1 tbsp butter

Wot u do
Melt the butter and oil and sweat off the onion and ginger for three or four minutes over heat – don’t brown. Add the carrot and mix around for 30 seconds on the heat. Add everything else and season with 1 tsp salt and 20 twists of black pepper. Boil, cover and simmer for 30 minutes. Blend.

Serves four easily.

TOP TIP: This soup can take a fair bit of seasoning – check once blended and add more as required.
