Plum Chutney

DSCF5532Plum chutney is a great way to use up summer fruit and is great at Christmas with cold cuts and cheeses!

Wot u need
1.5 kg plums, halved, stoned and roughly chopped
3 red onions, finely chopped
100g dried cranberries – chopped
100g sultanas – chopped
2 cooking apples – chopped
1 tbsp finely grated ginger
1 tbsp yellow mustard seeds
1 tbsp ground cumin
1 tbsp paprika
1 tsp chilli flakes
500 mls red wine vinegar
500g dark muscovado sugar
2 tsp salt

Wot u do
Chuck everything in a preserving pan except the sugar and salt. Bring to the boil, simmer and cook uncovered for 10 mins. Add the salt and stir, then thesugar, mix and bring to the boil. Reduce heat and simmer for 40 mins or so till the chutney is thick. Check regularly to avoid sticking.

Makes 9 jars – ensure jars are appropriately sterilised!
