This is the absolute prince of jellies and is dead easy to make. Your aim is to get a vibrant clear jelly with a good set. You can use this wonderful stuff with mild cheese and oatcakes or spread it on your morning toast. It is a great accompaniment to the Christmas period.

500 g brambles (blackberries)
600 g cooking apples
Juice of one lemon

Clean the brambles and add to a pan with the apples. The apples only need the stalks removed – you can roughly chop, skin on and cores in, to about 2 cm cubes. Cover the fruit with water to about half way up the level of the fruit. Boil then simmer for 5 mins. Add the whole lot to a jelly bag and allow to hang overnight. Never ever squeeze the bag or you’ll get a cloudy jelly. Next day measure the liquid into a measuring jug. For each 570mls of juice add 450g of sugar. Add to a clean pan and add the lemon juice. Boil till you get a jam set.
Makes 3-4 small jars. Make sure you use sterilised jars. Store in a cool dry place for up to 12 months. Eat within 14 days of opening.
