Perfect fajitas

This recipe is shamelessly nicked from this book which is highly recommended. I have made some changes though!

Fajitas are a wonderful comfort food and this recipe makes the perfect fajitas!

Wot u need

Marinade
1/4 cup fresh lime juice
1/3 cup water
2 tablespoons vegetable oil
1 large clove garlic, pressed
3 teaspoons vinegar (any type)
2 teaspoons soy sauce
1/2 teaspoon liquid smoke (from American grocers or online)
1 teaspoon salt
1/2 teaspoon chili powder
1/2 teaspoon cayenne pepper
1/4 teaspoon ground black pepper
Dash onion powder
3-4 boneless, skinless chicken breast halves or 1 pound top sirloin or a combination of 1 chicken breast half and 1/2 pound sirloin

And also…
1 Spanish onion, sliced
1 tablespoon vegetable oil
1 teaspoon soy sauce
2 tablespoons water
1/2 teaspoon lime juice
Dash ground black pepper
Dash salt

And sides…yoghurt; onion; peppers; iceberg lettuce; tortillas

Wot u do
Mix all the marinade ingredients in a bowl and add the sliced meat. Marinade in the fridge for four hours or overnight. Add the oil to a pan and cook the meat – remove and set aside. Add more oil and cook off your onion and peppers. Add the “And also…” marinade to the cooked veggies and cook for a few more minutes. Serve with the “And sides…”

Serves: 2 hungry folk or 3 normal folk 🙂
