Blueberry Muffins

This is the perfect recipe for “all American” muffins. They really are delicious and use all natural ingredients. If you want a taste of America, this is it!

Highly recommended!

Wot u need
100g bran
260g wholemeal flour
4 tsp baking powder
2 tsp bicarbonate of soda
Pinch of salt
480ml natural yoghurt
2 eggs
100g soft brown sugar
2 tbsp vegetable oil
2 tsp vanilla extract
2 tbsp runny honey
200g blueberries

Wot u do
Mix all the dry ingredients together (except the blueberries) in a bowl, making sure you sieve or break up the bicarbonate of soda. In a separate bowl mix the wet ingredients. Add the wet to the dry and lightly fold in the blueberries (keep a few back). Almost fill 12 muffin cases and lightly press in the remaining blueberries. Bake fan assisted 170 degrees c for 17 mins.

Makes 12. Can be frozen.

Top tip: Always use light brown sugar – dark sugar makes the final muffins look a little burned.
