These are great little additions to a curry or served as finger food. they also act as a great starter, drizzled with some sweet chilli sauce!
Wot u need
1 pack Vita cooked basmati rice
1 tbsp sultanas
1 med onion chopped
1 tsp garlic paste
1 tsp korma paste
8 mini mixed peppers or two large red or yellow bell peppers
1 tbsp veg oil

Wot u do
Sweat off onion and garlic for five mins till translucent. Add rice and break down with spatula. Once broken down, add korma pasta mix and add sultanas. Season and cool. Use fingers to stuff rice mix into peppers, spray with oil, place on a baking tray lined with baking paper and cook in oven at 220 degrees c for 20 mins till blistered and cooked.
Top tip: Cool and freeze – these peppers reheat perfectly in a medium microwave for 2 mins.
