Wot u need
4 unwaxed lemons – juice and zest only
100g unsalted butter, cubed
200g castor sugar
3 free range eggs + one extra egg yolk
Wot u do
Place the lemon juice and zest, butter and sugar in a glass bowl. Place over a pan of simmering water and leave till butter melted. Once melted, quickly add the lightly whisked eggs and allow to simmer for seven minutes. Then stir. Do the same twice more for 4 mins each time. The curd should be thick and silky and should fall off the back of a spoon.
Allow to cool for 15 mins – whilst still warm add to two small 250ml sterilised jars.
