Dark Sultana Loaf

This is a great tea-bread – brilliant with butter and it will keep for four days in a tin. Can also be frozen.

Wot u need
175g sultanas
150g caster sugar
90g butter
1 egg, beaten
1 tsp bicarbonate of soda
280g plain flour
200mls cold water

Wot u do
Add the water to a pan and chuck in the sultanas, sugar and butter. Bring to the boil slowly, turn down and simmer for 10 mins. Cool liquid completely. Add flour, bicarb and beaten egg to mix and give a good old mix. Line a 900g loaf tin with parchment and add mix (or use two 450g loaf tins.) Bake in oven at 140 degrees c for 1hr or 40mins if using two tins.

Cool, slice and enjoy!
