Tom Yum Gai (soup)

This soup is just brilliant it really is. It is the easiest thing in theDSCF1793
world to make and it’s filled with complex and fresh flavours. You just can’t go wrong with it!

Wot u need
2 dessertspoons tom yum paste
500 mls hot water
70g quartered button mushrooms
70g cooked prawns (or chicken if you like)
200mls coconut milk
1 tbsp well chopped coriander
lime wedges (cut into 1/8ths – IMPORTANT)

Wot u do
Fucking unbelievably simple. Add the paste to the water and put on the stove. Mix and bring to the boil quickly. Add mushrooms, prawn and milk and bring to a simmer. Cover and simmer for 10-15 mins. Add chopped coriander, mix and then
bowl up. Squeeze tiniest amount of lime when soup is plated.

Serves: 2-4

Top tips:
Do not add salt!
Use tom yum paste from Chinese supermarket and don’t use any fancy pants stuff from Tesco or Sainsburys.
Use dessert spoons NOT tablespoons – tom yum paste is strong!
