Pilau rice

This really is a great recipe that works every time. I used to struggle with rice but there will be no issue here – and the taste is immense. I was taught this at an Indian cooking course.

 

 

Wot u need
2 tbsp vegetable oil (I use rapeseed)
2 tsp cumin seeds
1/2 onion roughly diced
3 bay leaves
4 black cardamoms
2 inch cinammon stick
1/2 tsp salt
1 tsp garam masala
750mls boiled water
300 gms basmati rice

Wot u do
Heat oil and add cumin seeds. When they pop, add onion and cook for 2 mins. Add spices except salt and garam masala and fry for 4-5 mins till onions start to brown. Add garam masala and salt. Mix. Add washed rice and boiled water, bring to boil, cover and simmer for 10 mins. Rice will be perfect. Stir once. Cover for 5 mins.

Serves: three

Top tip: Use a fairly shallow pot. Water should be about 2-3 cms above level of rice mixture.
