Breakfast waffles

I bought a little waffle iron from Groupon – cost £15.00. It really is one of those gadgets that is supremely useful. I cannot recommend it highly enough. Go get one!

This recipe is just a classic – you won’t go wrong.

Wot u need
2 eggs
2 cups all-purpose flour
1 3/4 cups milk
1/4 cup vegetable oil
1 tablespoon white sugar
4 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract

Wot u do
Whisk the eggs for a minute till they start to go fluffy. Simply add all the other ingredients and whisk for 90 seconds. You end up with a thin batter – this is fine. Heat waffle iron and, when ready, spray with 1 cal cooking oil. Add mix and cook as per device instructions.

Serves: Makes four batches, 16 quarter waffles. Serve with maple syrup or butter or summer fruits. Or any combination! Or even serve with a savoury food!

Top tip: Use a teacup for measuring or 3/4 filled tea or coffee mug. The batter can be covered and kept refrigerated and can be used for up to three days.
