All this “quiche” stuff is nonsense. This recipe is “auld school” school meals and is a real winner – hearty and healthy in winter hot, and in summer cold. Perfect!
Wot u need
175g plain flour
100g cubed chilled butter – small cubes
1 egg yolk
4 tbsp cold water (approx)
1/2 sliced medium onion
1 tbsp butter
200g grated cheddar cheese
30g milk powder
1 tsp mustard powder
Bring together the pastry ingredients using the K beater on your mixer until they just come together. Cover and chill for 15 mins. Roll to 3mm and place in a 25 cm steel pie round. Prick pastry and refrigerate for 10 mins. Cover with baking paper and beans and bake blind at 180 degrees c for 10 mins then take out paper and beans and bake for a further 10 mins till lightly browned all over. Cool and egg wash with some egg from filling ingredients.
Fry onion in tbsp butter till soft not brown. Place on pastry and cover with cheese. Just before cooking, add milk powder, mustard powder and water together and beat in the eggs. Cover cheese with this mix.
Cook at 210 degrees c for 25 mins.
