I got this from the Tesco advert – it is just fantastic. Dead easy and low fat!
Wot u need
1 tbsp olive oil
1 red onion, chopped
2 vegetable stock cube (I use the jelly type)
1 medium sweet potato, peeled and roughly chopped
2 carrots, roughly chopped
2 red peppers, sliced
1 x 400g tin chopped tomatoes
200ml light coconut milk
Wot u do
Add the oil to a pot and cook off onion till translucent – 5 mins. Ass the veg cube to 750mls of hot water and add. Add all the other shit into the pan except the coconut milk. Bring to the boil, then cover, simmer for 20 mins. Blend and add coconut milk. Season.
